Pfizer Pediatric Products Review & Giveaway

I’m baaa-ack! I wanted to make sure to share with everyone this review of Pfizer Pediatric products and offer a giveaway to get you and your family through allergy & cold/flu season.

Yes, it’s that lovely time of year when allergy season overlaps with cold & flu season, reeking havoc on homes and school absenteeism everywhere. Yes, I am speaking from experience.

My son has a lot of allergies, along with asthma, so I often check the pollen levels in my area. The above picture comes from my Weather Channel app, and it’s updated daily. As you can see, the other day pollen was very high, and also cold & flu is still widespread. My son’s pediatrician said that due to the crazy weather, mild winter, etc. that we have been experiencing in our area, they are seeing an overlap in allergy symptoms and cold/flu. Fun times, I tell ya. The increasing pollen caused my son to have a flare up of nasal allergies, which resulted in an ear infection, along with an asthma flare-up.

Thankfully, I have a well stocked medicine cabinet to help when symptoms occur. Children’s Advil®,(which is ibuprofen) is my go-to for fever & pain. I definitely like to keep it on hand for those middle of the night earaches (and my son also gets migraines, so I use it for that as well. I know…poor kid!) There’s also Infants’ Advil® White Grape,  that comes with a syringe for easy dosing for children 6-23 months. My oldest daughter just had to use the Children’s Robitussin® Cough & Chest Congestion this week for her cough & chest congestion. The daytime formula does not cause drowsiness, so she could take it before school, and even though she’s 15, let’s face it, children’s products taste better! (It’s for everyone age 6 and older) The above shown value pack comes with a daytime & nighttime formula. We haven’t had to use the Children’s Dimetapp® Cold & Cough yet, but I am definitely keeping it handy. When you have 3 kids, you never know what is going to pop up…and usually spread through the house!

Meat Lover’s Pizza Dip

So, I heard there’s a big football game coming up pretty soon. And y’all know me, any excuse to make & eat party food. This pizza dip would be great for a Super Bowl party (or any party), for after school snacking, or you can go crazy and eat it for dinner (which is exactly what my husband did one night recently.) It can be a low-carb alternative to traditional pizza, depending on what you eat it with.

Meat Lovers Pizza Dip

You can also add whatever pizza toppings you like. I made this a ‘Meat Lover’s’ version, full of (turkey) pepperoni, seasoned ground beef, and bacon. Sausage and Canadian Bacon would have been good too.

This is a cheesy, creamy dip, that is good with tortilla chips, corn chips, pita chips, toasted French bread, bread sticks, and the list goes on. I wasn’t a big fan of the pretzels used in the above pic however. They turned a little soft & I didn’t like the texture. Of course, the dip is also good eaten with a spoon!

As you can see, the amounts and ingredients are very versatile. Anything you like on pizza will probably work well in this dip. Feel free to add more or less meat, cheese, and spices.

Loose Meat Sandwiches

So, if you’re all like ‘loose…whaaat?’ Then I’m with ya. That was my first response when I saw it a while back on Pinterest. Being the Southern gal I am, loose meat is not something I’ve heard of or eaten before, and honestly, it doesn’t sound all that appetizing. But neither does Dump Cake or White Trash Mix and those are the bomb. Apparently loose meat is a mid-western thing. I was curious and decided to give it a try.

Basically, it’s ground beef, simmered in water, broth and seasonings until the water cooks out and the meat is left very flavorful.  It kind of looks like a Sloppy Joe, but does not taste like one. It is somewhat reminiscent of Cincinnati Chili in the seasonings used and cooking technique, but without the tomato base. In other words…it’s unique and you just need to try it!

The best thing of all is that my kids liked it. ALL THREE of them. That in itself is nothing short of a Christmas miracle.

Even more incredible is that my 7 year old, who eats very little meat, LOVED it. He ate two the first night, and ate leftovers on two other occasions. I was thrilled to get some meat in that kid. Don’t be jealous over my ‘fine china’. And please ignore my son’s lack of clothing. Dressing for dinner is optional around here. Dressing at all is optional in his opinion. Ahhh, to be 7. And have no body fat.

A sturdy roll/bun is recommended otherwise it’s going to get soggy & fall apart. I’m not a fan of soggy bread, so I made sure to cook my beef until almost all of the water was gone. You can leave some “juice” and strain the beef out if you would rather. The bun will soak up some of that broth and I’m sure is pretty good that way too. I used the new King’s Hawaiian Hamburger Buns. Traditionally, loose meat is served with pickles and mustard, which I liked. My son opted for ketchup….which he puts on pretty much everything.

Creamy Hoisin Egg Roll Dipping Sauce

The holidays are in full swing, and with that brings social gatherings. And obviously you can’t have a get together without lots of good eats…otherwise it’s just a meeting. (Ok, so I’m sort of paraphrasing Julia Child, but she definitely had a point.) I love party food (aka appetizers, appies, finger foods, or hors d’oeuvres <– hardest word ever to spell)

Sometimes we have hors d’oeuvre night where we just have a bunch of party food for dinner. My kids love that (for obvious reasons.) It’s mainly for “special occasions”. Anyway, as much as I love making everything from scratch, like homemade egg rolls, I often just don’t. have. time. So, I was thrilled to find these MINH® Mini Chicken Egg Rolls at Sam’s Club.

They are affordable, you get a bunch in a box, and most important – they are delish!

They are the perfect size to serve at a party too. They bake in the oven in under 15 minutes, and come with a tasty sweet chili sauce.

I’ve sprinkled this platter with dried cilantro and red pepper flakes (green & red!) but it could be easily omitted, or just added to the sauces. You could also use basil I think, but I would not recommend oregano (personal opinion).

Along with the sweet chili sauce, I wanted a white sauce (I almost made it green with the addition of green dragon sauce, but I wasn’t sure if it would look appetizing.) This is a mild, creamy, slightly sweet sauce that pairs well with the egg rolls and perfect for those who have a low heat tolerance (everyone in my house except me!), but you can easily spice it up by increasing the chili paste or adding red pepper flakes.

In addition to mini egg rolls, my other “go-to” party foods are sausage balls (these are a must at Christmas and New Year’s!), Creamy Sausage Dip, Chips with restaurant style salsa, chips and dip, cheese and crackers, and at Christmas, there will be fudge on the dessert table, along with these…022

Pretzel Treats…my kids LOVE these. Obviously, we don’t usually have fancy parties. We have family, kid-friendly parties! What’s your favorite party food?

Cinnamon Roll Waffles

This isn’t so much a recipe as an idea. I’ve seen it around Pinterest, along with everything else people are putting in the waffle maker. It does kind of make me want to waffle everything. If you follow me on Instagram, you know that I made these Cinnamon Roll Waffles for my kids on Halloween morning. Because they weren’t going to have enough sugar that day. Hashtag: WTH was I thinking?! Of course, they loved them.

I’m assuming you could make these with homemade cinnamon rolls, but y’all know that’s not how I roll. Roll…get it? Cinnamon roll? Hahaha, I crack myself up. And I’m pretty sure it’s not the first time I’ve made that joke on here. #Lame. {Moving on…} I will bust out with Quick & Easy Cinnamon Rolls on occasion, but for these, I used canned cinnamon rolls by Pillsbury. The ‘syrup’ is just a little of the icing that comes with them. Then we added sprinkles. Because it was Halloween and sprinkles are fun. (Even though I think they taste nasty. Kids like ’em however.)

Where has the summer gone?! I’ve already heard of some kids going back to school, and my own go back in a couple of weeks. I really don’t feel like we’ve had much of a break! However, with school being out, I have really been off my normal routine, and with that, meal planning has gone out the window. I’m very ready to get back to planning healthier, balanced meals. This will mean planning for super busy mornings, lunch boxes, and meals in hurry due to various sports practices.  

With so many meals eaten on the go, or prepared in a hurry, it’s easy to opt for convenience foods. However, I still want our nutritional needs met. For example, did you know it is recommended that adults eat 48 grams or more of whole grains daily and children ages 4-13 eat a minimum of 40-48 grams per day? (You can read more about whole grains and guidelines here and here.) Many of us are not getting enough, which is why Nature’s Harvest® bread has launched the “Whole Grain Challenge”. The challenge is to encourage moms and families to incorporate 48 grams of whole grains into their diets every day. You can find educational content on the Nature’s Harvest® website and Facebook page to help stay on track and participants can take the whole grain pledge on the Nature’s Harvest® Facebook page and automatically be entered into a weekly sweepstakes, but hurry, it ends August 10th.

Nature’s Harvest® bread has at least 8 grams of whole grains per serving, no artificial flavors or colors, and no high fructose corn syrup. That gives them an A+ in my book!
These portable Breakfast Casserole ‘Muffins’ incorporate whole grains, protein rich eggs and cheese and best of all, they are portion controlled, easy to eat on the go, re-heat beautifully (I actually prefer them re-heated the next day!) and I imagine they could even be frozen…but mine have not lasted long enough to find out! They are also a great way to use up leftovers or fresh veggies from the garden, the recipe can be modified to whatever your family likes – add pepper and onions, use ham, sausage, mushrooms, vary the cheeses and spices, get creative!

Breakfast Casserole – To Go!

3-5 slices whole grain bread (enough to fill your muffin tins almost to the top) I used Nature’s Harvest® Butter Top Made with Whole Grain White Bread
1/4-1/2 cup bacon pieces (or meat of choice; I used this)
1 cup shredded cheese 
8 eggs
1/2 cup milk
1 teaspoon dry mustard (optional)
1/2 teaspoon sage (optional)
1/2 teaspoon basil (optional)
salt and pepper, to taste
  • Preheat oven to 400 degrees Fahrenheit. Spray a 12 cup muffin tin with cooking spray.
  • Tear or cut bread into 1/2 inch pieces. Place in prepared muffin tin, filling 3/4ths full.
  • Sprinkle bacon pieces over bread, top with cheese.
  • In a medium bowl or large measuring cup, whisk together eggs, milk and spices. Carefully pour into muffin tins, dividing equally. (I just eyeballed this!)
  • Bake for 15-20 mins, or until eggs are set and cooked through.

These make a handy breakfast, lunch or dinner. I served mine for ‘brinner’ with grits, then reheated the leftovers in the microwave for breakfast with a side of fruit. As I stated earlier, I actually preferred them reheated, which is a rarity, but definitely puts these in my keeper file!

Congrats! It’s a….watermelon? {Watermelon Baby Carriage} #babyshower ideas

Last summer, I helped throw my sister a baby shower. It was so much fun, and I did a post sharing the punch recipe and the party favors. My plan was to share a bunch of other things…and per usual, life got in the way. Well, better late than never right?!

One of my favorite things was this watermelon baby carriage. I was so proud of myself for actually pulling it off! Granted, there are much more intricate ones online, but I love my creepy grapefruit baby and it’s simple watermelon carriage. It looks cute on the food table, and it can be used for a boy or girl, and with pretty much any theme!
This was our food table, with a side table to the far right (not pictured) with meatballs, and we had some candy that matched our color scheme (pink/green/white) sitting around throughout.
Since we had the shower in the summer, watermelon was in season, as well as most of the other fruits used, which was a money saver. You can use any combination of fruits you like or have available.

Watermelon Baby Carriage

  • 1 watermelon (any size, and make it easy on yourself and get a seedless one!)
  • 1 grapefruit, size will depend on the size of the watermelon. It’s going to become the baby’s head, so think about how much space you want it to take up. Note: You can also use an orange, if you need something smaller than a grapefruit
  • 1 pink or blue pacifier
  • grapes/blueberries or other small fruit to make “eyes” and “nose”
  • toothpicks
  • assorted fruit to fill “carriage”, again the amounts will depend on the size of the watermelon.
To prepare-
  1. Place watermelon on a flat surface (on top of newspaper or towels to catch the juice). If needed, cut a small slice of rind off the bottom to help it sit flat.
  2. Use a marker (or visualize) a line down the middle of the watermelon horizontally. Vertically, you will draw a line that is not quite centered…at about 1/3 or a little more of the watermelon.  Using a sharp knife, cut from the top vertical line, down to the center horizontal line. This is easier than it sounds…just take a look at a pic and cut accordingly. (I didn’t measure anything, and I just freehanded my lines. No perfectionism here! If your lines aren’t perfectly straight, it’s okay. If needed, you can go back and neaten/trim them up.)
  3. After you have cut out the top quarter of the watermelon, scoop out all the fruit. I used a melon baller, so my pieces looked nice and were ready to add back into the watermelon.
  4. Add some of the watermelon and assorted fruit to the bottom and back of the watermelon. Add whole grapefruit in center. Place fruit around grapefruit until “carriage” is full.
  5. Use 2 pieces of fruit to make eyes – I used a grape, cut in half. Place toothpick into grapefruit, where you want the eyes to go…leave enough of the toothpick sticking out to secure the eyes in place. Do the same for the nose…I used a blueberry for this. Make a small slit in the grapefruit for the mouth. Insert pacifier.
Congrats! You have a watermelon baby. This is just a basic one, if you have creativity and artistic ability, you can get as fancy as you want. I’ve seen some with scalloped edges, a handle for the carriage, wheels, etc.

Candy Bouquet {Dollar Tree DIY}

Since I’ve been MIA from the blog, I wanted to give you all a special gift. Like a bouquet of flowers maybe? Flowers are nice….but a candy bouquet is even better!
This is something I very quickly and easily put together from supplies found at my local Dollar Tree store. It would make a great “little something extra” for that special teacher (end-of-the-year is near!), graduations, birthdays or let the kids put one together for Father’s Day (June 21st!)
This one has a ‘base’ made of my oldest daughter’s favorite candy…Swedish Fish, but any “movie theater” box of candies will work. Then I added various candy, suckers, fun straws, and a balloon in the center. On the balloon, I put her name, using stick-on letters and her jersey # since this was for a sports thing (8th grade recognition night for Volleyball). The Skittles and gum packets were taped to lollipop sticks.
To make…you need 4 boxes of candy, the same size. Then you need one foam block, usually found with floral supplies, like this one…

It doesn’t really matter what size, as long as the boxes of candy fit around it. You can also trim the blocks down if too tall.
  • Place the boxes of candy around the foam block, using duct tape, packaging tape, or glue to keep the boxes stable and adhered to block. Next, add your candy. If using suckers/lollipops, stick them evenly into and around the foam block, like you would flowers! Then, fill in spaces with other candy (attached to lollipop/cake pop sticks) or use straws or anything else you would like. Get creative! Now you have your own bouquet to share…
At least she was supposed to share…

Fun Graduation Treats

Whether you are celebrating high school, college, or Kindergarten graduations soon, these fun graduation treats will make any age graduate feel extra special. We will be celebrating 1st, 6th and 8th grade graduations so I will have an excuse to make them as well! (As an added bonus, they are no-bake treats!)

30 Minute Kid-Friendly Meals {using biscuits, crescent roll or pizza dough}

I know many of you are in the same situation as I am…Spring Sports. The constant running of children from school to practice to games, etc. When is practice? Dinner time. So when do you feed the kids? For us it has to be something super quick and easy. Sometimes portable! Today’s round-up comes from my stash of recipes using store-bought biscuits, crescent roll dough or pizza dough. I try not to rely on these too often, but sometimes you just need some shortcuts, and I still think it’s healthier than the choices my kids would make in a drive-thru!

The most popular on the blog are the “Bubble Up” Recipes, using canned biscuits. These are a hit with my kids as well.

Pizza ‘Braid’ – this can have any fillings you want, and you can use pizza dough or crescent roll dough. It’s the presentation that makes this one unique!
