Italian meets Mexican. Why not?!
I’m not sure how this ended up being the only picture I have…I must have been hungry that night. (of course, that’s every night…so really not an excuse)
When I saw this posted at Eat at Home, I knew I wanted to give it a try. I love Italian sausage, and enchiladas, I just never thought to mix the two.
Italian Sausage Enchiladas adapted from Eat at Home
1/4 lb. turkey Italian sausage
1/4 lb. lean ground beef
1/4 chopped yellow onion
4 oz. Mexican Blend shredded cheese
4-5 whole wheat tortillas
5 oz enchilada sauce (I froze the other half of can)
approx 8 oz tomato sauce (I froze the other half of can)
1/4 tsp garlic powder
Brown turkey sausage, ground beef and onion in large skillet.
Mix 2/3 of the cheese with the meat, reserving remaining cheese for the top.
Stir together enchilada sauce, tomato sauce and garlic powder.
Spread some sauce on bottom of 8×8 pan.**
Fill tortillas with meat and cheese. Roll and place in pan.
Cover with sauce. Top with cheese.
Bake 30 minutes or until hot and cheese is melted at 350 degrees.
**Notes – I made half of the original recipe. Double ingredients and use a 9 x 13 pan for full recipe.
Verdict? – It was yummy. Like I said, I love Italian sausage and this would have been good using all sausage too, which is what was done in the original recipe. Even my 2 girls ate this…however, Number One just ate the filling. My kids are soooo picky.
I originally cooked a lb of turkey sausage and a lb of lean ground beef. I froze the extra, and ended up using it in soup. The remaining tomato sauce was actually used in yesterday’s Chicken Tortilla Soup. I have found the freezing individual ingredients sometimes works out better than making a full amount of a recipe and freezing half of the finished product…unless it is something that you know your family will like and eat. (and will freeze well) Since I am frequently trying new recipes, I never know if it’s going to go over well or not!
So go on and try some Mexi-talian for dinner tonight!
